I love the mini cupcakes, but I think they would also be cute with the Mother's Day Toppers from last week! Let's get started...
Flower Pot Cupcake Supplies
Terra Cotta Flower Pots - any size will work, I used 4 inch diameter x 3 1/2 inches tall
Mini Cupcakes - I used Wilton Lavender Petal Baking Cups that look like flowers
Frosting
Petals - Mini Marshmallows
Flower Center - Yellow Jelly Beans or other candy
Petals - Colored Sugar
Leaves - Green Gum Drops
Mini Leaf Cookie Cutter
Skewers
Dirt - Crushed Oreos
Directions:
Wash Terra Cotta Pots and dry. Place a piece of foil over the hole in the bottom. Spray inside of pot with non-stick cooking spray. Preheat oven to 350 degrees. Mix up your favorite cupcakes. Fill pots about 2/3 full. Add cupcake liners to a mini muffin tin and fill. Bake Flower Pots about 30 - 40 minutes depending on the size of your pot. Bake Mini Cupcake Flowers about 7-8 minutes or until a toothpick inserted comes out clean.
Cool cupcakes
While cupcakes are cooling, make the flower petals. Cut Mini Marshmallow in half on the diagonal, immediately dip in colored sugar. You may need to pull the marshmallow open a bit to expose more of the cut area. Crush Oreo Cookies in food processor or place them in a resealable bag and use a rolling pin to crush.
After the cupcakes are cool, frost the cupcake in the Flower Pot with a little frosting and sprinkle on "dirt".
Frost the mini cupcakes, then place a yellow candy in the center and add the petals around the center
Using your hand or a rolling pin, flatten gum drop and cut leaf with cookie cutter
Poke the bottom of the cupcake with the skewer. You may need to cut the skewer, depending on what length you have. Poke into Flower Pot. Add leaves by gently pushing them onto the skewer.
